Basic Grain-Free Granola

Grain-free granola, otherwise known as paleonola, has become my favorite breakfast alternative to eggs. It is loaded with nutrients and healthy fats to keep you full throughout the morning. If you want a satisfying, delicious breakfast without tons of refined sugar, give this a try. This is a simple, quick recipe that is easy to customize to your own tastes. Each time I make it, I use variations of nuts, spices, seeds, and sweeteners to make different flavors. Use mine as a base recipe, and feel free to make it your own!

  1. Preheat oven to 350 degrees F.
  2. Grease cookie sheet with coconut oil
  3. Grind up the almonds and walnuts (or whatever nuts you choose to use) using a food processor or blender until they reach a consistency similar to flour. Leave some of the nuts only slightly ground or chopped to provide various textures.
  4. In a large mixing bowl, combine all ingredients until wet ingredients are thoroughly distributed. You can add more or less honey or oil depending on how chunky you want your granola. More honey and oil will give you a chunkier result.
  5. Spread mixture evenly on the cookie sheet. Make sure the layer near edges of the cookie sheet is as thick as the center. Otherwise, it will burn.
  6. Bake for 10-15 minutes or until golden brown. Note that the edges will brown before the center. I usually pull it out of the oven once the edges are browned.
  7. Allow to cool, pop into an air-tight container and enjoy with fruit and milk!
